Lasagna is such a good, hearty meal during the cold winter months but it’s hard to serve, and hard to save or freeze. Have no fear! We have an easy way to make your lasagna in a way that’s easy to portion out and easy to freeze. Full disclosure: this idea came from my own mother, who taught me much about what I know in the kitchen. This is my favorite meal so I get it for my birthday every year.
To prepare the simple lasagna rolls, cook lasagna noodles, sauce and mix the ricotta filling like you normally would. I don’t have any secret recipe here. Look for a recipe on the back of the lasagna pasta box, or on a container or ricotta cheese. But here is the trick – Don’t build the lasagna in layers in your pan! Lay out the noodles, put some of the cheese filling down, a slice of salami (like we do), then roll it up! Place a thin layer of sauce in the bottom of your dish, add the rolls side-by-side, and top the entire dish with sauce. Bake it for 40-45 minutes, serve and enjoy! Top with additional mozzarella cheese if you feel so inclined.
After the lasagna is fully cooked, the rolls are much easier to serve than traditional layered lasagna. Freeze a couple of rolls in a plastic container, and you’ve got an easy weeknight meal.
